This Italian pork roast is fabulous! Have tried other more local Italian butchers; however, this is best by far.

I first ate porchetta in Perugia, in Umbria, one of the two main provinces where it is produced for weekend markets, festivals and the occasional bar/grocery which has a sufficiently large clientele. Having had other US unsuccessful approximations from reputable and dubious butchers, I was delighted to find the Fraboni version, which has much the same quality as the natives. I’d recommend roasting it (perhaps on wood or charcoal) and letting it rest quite a long time to let the flavors come up. It’s likely to be even better the second day (and in Italy is usually served up cool in a sandwich, the only variation to have some of the liver added from where it cooked in the herbs in the belly). It can be re-heated in the oven for cold weather ….
